Commercial Fryer Buying Guide
Understanding the Different Types of Commercial Fryers
1. Tube Fryers (Gas)
A tube fryer is one of the most versatile fryers on the market. As the name suggests, there are a series of tubes that carry gas through pipes inside the frypot. The tubes run along the entire length of the fryer basin. When the fryer is filled with oil, these tubes can be used to heat the fryer more evenly. Because the tubes are at the bottom, this creates more room in the oil chamber for frying.
Pros of Tube Fryers
A tube fryer is one of the most versatile fryers on the market. As the name suggests, there are a series of tubes that carry gas through pipes inside the frypot. The tubes run along the entire length of the fryer basin. When the fryer is filled with oil, these tubes can be used to heat the fryer more evenly. Because the tubes are at the bottom, this creates more room in the oil chamber for frying.
Cons of Tube Fryers
The round tubes that heat the oil are expansive and because of their shape, they can be difficult to clean. Also, inside of the tube, there are baffles, which are designed to produce maximum heat transfer. Baffles may weaken over time. This can be a costly fix and will end up causing more gas production, increasing your energy use.
2. Open-Pot Fryers (Gas)
An open-pot fryer is very similar to the structure of the tube fryer. Rather than the tubes being inside of the oil basin, they are placed on the tank’s exterior.
Pros of Open-Pot Fryers
Unlike the tube model, the tubes remain outside of the basin, which means that no oil ever touches them. This can make for an easier cleaning maintenance from the back of the house. Also, this creates a larger basin for frying.
Cons of Open-Pot Fryers
While the tubes being outside of the pot can create a larger basin, it can make the unit a bit less energy efficient. Because the heating tubes are not in constant contact with the oil, they need to use more energy to get the basin and oil hot.
3. Flat-Bottom Fryers (Gas)
Flat-bottom fryers are designed with a flat bottom, rather than a “V” shape. The heating elements are positioned underneath the flat-bottom. In this style of fryer, you do not have to use baskets to house the items that you are cooking. This fryer allows you to drop in the items directly into the oil basin. They will sink, cook, then rise to the top when they are about done.
Pros of Flat-bottom Fryers
Flat-bottom fry pots are the best option for battered foods. Because you do not need to use baskets, the food can float freely in the oil without the worry of it clinging to the basket. This can be an optimal choice for food trucks or restaurants that serve funnel cakes, donuts, onion rings, or anything that is battered and fried.
Cons of Flat-bottom Fryers
Food fried in a flat-bottom fryer floats around freely, which can take up space fairly quickly. Because there is really no control of the items you are frying, this fryer isn’t suited for high-volume cooking.
4. Electric Frypots
Electric fryers can closely mimic tube-type fryers but can be more energy efficient. Because gas cannot be directly exposed to oil, the heating elements in a tube-type fryer have to be concealed and welded inside of a tube, then submerged in oil. With electric fryers, the heat can be directly in contact with the oil, which makes this style one of the most heat-efficient.
Pros of Electric Frypots
This style of fryer is the most energy efficient on the market. Because it uses electricity rather than gas, it can contact and heat oil much quicker and also recover faster than a gas style burner. Typically, electric fryers are the easiest to clean as the elements swing up, allowing full access to the frypot.
Cons Electric Frypots
Depending on the location of your restaurant, the cost of electric utility may be more than the cost of gas.
5. Specialty Fryers (Gas or Electric)
Pros of Specialty Fryers
If your restaurant doesn’t need a large or multi-use fryer, a specialty fryer might be the best choice. You can get a model for exactly what your restaurant uses, creating the most efficiency for your kitchen.
Cons of Specialty Fryers
Because these fryers serve a specific purpose, they can limit your frying options and capabilities. If you want to expand your fried food menu, you might need to invest in another more versatile fryer.

In the bustling world of commercial food service, maintaining impeccable food safety standards is paramount. For individuals with food allergies or sensitivities, cross-contamination can have severe consequences. Color-coded kitchen tools have emerged as a smart and efficient solution, streamlining operations while safeguarding both business owners and patrons. These tools offer an organized approach that minimizes cross-contamination risks and maximizes efficiency.
Color-coded kitchen tools assign specific hues to different food categories. This approach helps prevent cross-contamination by ensuring that tools used for raw meats, cooked foods, and vegetables remain distinct, reducing the likelihood of foodborne illnesses.
Color-coding developed using the guidelines of the FDA's Hazard Analysis and Critical Control Points (HACCP), a management system in which food safety is addressed through the analysis and control of biological, chemical and physical hazards from raw material product, procurement and handling, to manufacturing, distribution and consumption of the finished product.
Adhering to stringent food safety regulations is essential for commercial food service establishments. Implementing color-coded tools demonstrates a commitment to safety protocols, reducing the chances of fines, legal troubles, and reputational damage.
An added benefit is that, by assigning colors to various tasks, kitchen staff can quickly identify the tools they need, promoting an efficient and organized workspace. This optimization minimizes confusion, expedites food preparation, and ultimately enhances customer satisfaction.
Common color coding examples
It's important to note that while these color associations are common, there isn't a universal standard, and practices might vary between establishments and regions. To ensure consistency and clarity, it's essential for food service establishments to clearly communicate their color-coding system to their staff and patrons, regardless of the specific colors chosen.

Ghost Kitchens
The secret ingredient in growing your business
We have seen the ghost of restaurants future, and it’s not entirely frightening! In fact, the opportunity to expand your business with low risk and low capital has never been greater. The secret ingredient to growing your business is a ghost kitchen.
A ghost kitchen–AKA Cloud Kitchen/Dark Kitchen/Virtual Restaurant/Satellite Kitchen–is a commercial kitchen without any seating capacity, designed specifically for delivery orders.
Ghost kitchens were a $43.1 billion industry in 2019, and are expected to reach $71.4 billion by 2027, according to Hospitality Technology. It’s easy to see why ghost kitchens are emerging as a megatrend. U.S. meal delivery sales have risen about 300% since 2018. Ghost kitchens align with that trend, offering faster expansion and bigger profits.
Benefits of Ghost Kitchens
Open a ghost kitchen in 90 days or less – with no front-of-house you can get your ghost kitchen up and running much faster than a brick & mortar restaurant.
Expand your geographic reach – test new markets before you commit to a traditional restaurant
Reduce risk and capital – ghost kitchens have lower labor costs, lower operating costs, lower rent, etc.
Streamline operations – Leverage technology to run your entire business from a tablet in the kitchen
Getting Started
It’s possible to open a ghost kitchen on your own, from sourcing the real estate, building the kitchen and the technology infrastructure, and delivery logistics. But this is very capital-intensive. New restaurants can rent a commissary kitchen or use an existing kitchen
Develop a delivery system or partner with third-party food delivery apps. Do the math! Apps like Uber Eats and Grubhub can take as much as 30% of your profit and you won’t have access to customer data.
There are partners such as Cloud Kitchens® , started by former Uber founder and CEO Travis Kalanick, that offer chefs and restauranteurs a turnkey solution to start a business or expand into new geographies with a ghost kitchen
Franklin Junction is a marketplace geared around connecting existing (and often idle) kitchen capacity with ghost kitchen concepts.
Pay Attention to the Customer Experience
In a virtual restaurant, the packaging you choose is an essential part of the customer experience. Packaging can make the difference between a lost customer and a loyal patron. Here are some tips to delight your customers:
Add your logo to the packaging to make your business more memorable.
Choose the appropriate container for the food you are preparing, so hot food stays hot, cold food stays cold, and there are no leaks or seeping oil.
Use tamper-proof containers or tamper-evident labels.
Pack food to maintain quality during travel. Consider putting the sauce on the side, packing salads separate form steamy entrees, and using vented lids for crispy cuisine.
Ghost kitchens can be a low-cost, low-risk approach to expanding your business or exploring new dining concepts before making a huge capital investment. It also aligns with a market shift toward takeout (even pre-pandemic) so there is real market opportunity. The bottom line is that, while the Dine-in experience is certainly not going to become the ghost of restaurants past, market trends and technological changes mean that ghost kitchens are dining’s future.

Revolutionizing the commercial kitchen, the combination oven is one of the most modern cooking appliances on the market. Using both the power of convection and steam heat, combination ovens, or combis, add immense versatility to any commercial kitchen and menu. If you are just learning about combi ovens or if you are looking to add one to your space, here are some benefits you can expect to see almost immediately when adding this advanced cooking appliance to your lineup.
Uses Both Convection and Steam Heat Methods
Combi ovens are all about controlling temperature and humidity in the cavity. They use the power of both convection and steam to transfer heat to foods – individually and combined. Convection heat circulates hot air around the chamber to cook and brown foods evenly while a precise percentage of steam humidity is simultaneously injected into the oven cavity. This process ensures that foods cook thoroughly and evenly without damaging or compromising its integrity. This dual heating technology allows operators to cook anything from roasted meats to steamed vegetables just by changing the temperature setting.
Precise Temperature & Humidity Control
The heart of any combi oven is its core cavity where the food is cooked. No matter what combi oven you use, temperature, time and humidity are the three most important functions to get the cooking results desired. The word combi does not exist without the ability to control all these functions accurately in the oven cavity. No matter if you are cooking in convection or steam heat, you are always dealing with humidity in the cavity. As foods heat, moisture is removed, creating humidity. Combis can control what the food is releasing in terms of humidity during the cooking process by opening or closing vents to capture or release excess humidity, creating an environment where steam and humidity are added to the cavity at any temperature.
Accomplish Nearly All Cooking Methods
Because of the dual heating inside of the combi oven, there are many different cooking methods that can be accomplished. Here are some of the most popular cooking methods for your combi oven:
Deliver More Desirable and Consistent Results
Due to the advanced technology of the combi oven, operators can expect consistent results every time. No matter how busy the kitchen can get on any given day, the combi oven can always be relied on for consistent results every time.
The versatility of a combi is unmatched - helping you reduce shrinkage and weight loss in foods, creating juicy, flavorful results in less time and effort from one piece of equipment. Having the ability to control humidity in a combi is wonderful technology for all operators who have to do more with less equipment.

People think about a few things when picking up a to-go order or waiting on third-party food delivery: I hope they get the order right. I hope my food isn't soggy. I hope my food is secure...
When it comes to return restaurant orders, maintaining consumer confidence is key especially in choosing the proper carry-out container. Studies have shown that 67% of customers rank the quality of the food container as most important. Let's face it, if you were to order from your favorite restaurant, get home only to find your food is soggy, wilted or worse find all your sides have piled into one compartment making a leaky, greasy mess, you'll be reconsidering its ranking. Now, with health and safety at the forefront of the public's mind, attention to reliable and secure take-out containers is more pressing than ever.
Attention to detail is important when it comes to what we put our food in. What works for a salad, grain power bowl or pasta dish, may not be the best option for a steak and fries meal. We've gather six tips to consider when shopping for catering to-go containers to ensure the best delivery and score high ratings from your customers.
If you are serving warm fried, baked or saucy meals, vented takeout containers will be best for your business. Vented takeout containers are similar to the standard plastic containers but, includes holes in the lids to help steam escape. Steam causes excessive moisture, which is the number one enemy for fried, grilled and crispy foods. If the steam has nowhere to escape, moisture will begin to collect on the lid forming condensation, eventually wetting and altering your meal. Vented plastic containers are also great for reheating meals.
In the food service industry, branding matters. If your displaying food in bakery shop or grocery store such as bread, cupcakes, and other sweet treats, you'll want to have your stand out against the competition. Cake boxes with a plastic window help customers know what the food looks inside while keeping a contemporary and stylish look. Place a brand sticker on the plastic for design and nutrition facts on the Kraft part of the box. To keep food safe from tampering, use a label to keep the box from opening.
Using tamper-evident labels and containers are the clearest sign that food items have not been touched by anyone else besides the purchasing customer. Smart labeling can protect the food from spills, leakage and contamination. Tamper-evident labels can also be used to close takeout bags or boxes that the food is packaged in creating a clear deterrent to delivery staff. Discouraging delivery personnel from sampling or tampering with food orders also supports food safety concerns. A ripped label alerts the customer that the order was tampered with and the restaurant or store can then replace their purchase.
Entree orders with multiple sides need to be treated as such. Compartment foam containers are great way to premeditate portion control meals. Perfect for quick-service restaurants in which customers can create pick-2 sides and entree dishes. Foam, plastic and aluminum compartment dinnerware are the most commonly used for its durability and easy to mold design.
Disposable doesn't always mean to throw away in the trash. Sustainable carry-out food and beverage containers are making a wave in the culinary world for its eco-friendly initiative. Compostable containers and dinnerware make it easy for the customer to throw everything into the same compostable bin instead of having to separate plastic materials from food materials. Compost is organic matter made from decomposed waste products. Compost feeds back into the earth unlike plastic, eliminating excess pollution. Most biodegradable containers compliment most foods that will not require ventilation.
Aluminum is extremely versatile and compliments most food types and restaurant delivery design. Aluminium is recyclable and is extremely malleable; Customers enjoy the foldable aluminum lids for its easy to put back on to store in refrigerator, or freezer. Although aluminum can not go into the microwave, for catering large orders like casseroles, chicken wings or pies, delivering food in a ready made container allows for effortless reheating in the oven.

Flower walls are trending as the new sought after party must-have, however, designing or ordering custom walls can get pricey or the task becomes too overwhelming. We created a St. Patrick's Day custom wall as example of how to create an easy, customizable look using our paper fans and clover cut-outs. The entire look comes just under $15 and with about 30 minutes of prep and design time. Take this inspiration and apply it to your next office party, baby shower, birthday party etc. Create something you'll be proud of without breaking the bank or your back.
Step 1
Supplies:
Scissors
Paper Clips
Tape
The best part about creating this Flower Wall is that most of the supplies needed can be found in any office. After locating these necessary pieces begin brainstorming what kind of look you'd like to create for you space and where you'd like to showcase it. Try finding a blank space such as a blank wall or a door. This will give you the opportunity to allow your imagination soar without dealing with obstacles like bulletin boards or light switches. Once you've found your space then it's time to get your decorations.
Step 2
Decorations
In honor of St. Patrick's Day, we selected traditional Irish colors found in the flag of Ireland and clover cut-outs found in our Party supplies department. If you are budget conscious party planner, our party supplies have excellent basics that can help build the foundation for any occasion. We chose to incorporate two different types of paper fans to add texture and versatility to our flower wall. Having too much of one color or design can make your wall look cluttered so, it's important to mix it up.
As you can see, the paper fans are constructed slightly different than each other. The fan on the left (white) has an extended string and on the right (orange) the fan has a string loop hook and tabs along the cardboard spine. We'll show you the best method on how to hang each on the wall without damaging the fans.
Step 3
Paper Clips Are Your Friends
Now, this step can be applied for both paper fans, but in this example we have used the orange fan to walk this step through. Open up your paper fan in a full sweeping motion, revealing it entirely. If your intentions are to use the paper fan once, you may open the attached taps and fold them over, keeping the fan in tact. However, if you like to save the paper fans, take two paper clips and clasp them over the cardboard spine.
The paper clips do not damage the fans and actually holds them down to spine better. The taps attached to fans has an adhesive tape that will rip the fans upon reopening, so be mindful of the longevity of your fans.
Paper fans with the extended string are just as easy to set up. You may either wrap the extended string around the spine or cut the string. Unlike the orange fan, paper fans with the extended string do not have tabs. Take two paper clips and repeat the same step applied to the orange fan.
This is the best part of the project. Begin stacking our paper fans and cut-outs on the wall. Whether you cover the entire wall or create an arch, make it fun and enjoy the process.
Step 5:
Clean Up
Another perk of this DIY project is that it is zero-waste. Paper fans are 100% recyclable and can survive an extended shelf life. If you'd like to keep your decorations for an upcoming holiday, find an empty filing box and store them into a dim lit room or cabinet. Remove the decorations from the wall one by one, inspecting for rips, tears and to take off paper-clips and tape delicately. Re-fold the fans and stack them safely into your box.
At any rate, this simple DIY project comes at little cost and no guilt of wasting extra paper.
We'd love to see what you've created. Follow @shopatdean on Instagram and tag us in your food pictures, tableware sets or DIY projects!

DS: You've worked with a wide range of clientele. From catering for Beyoncé to supporting local non-profits what has been your most excitable achievement?
SS: Being relevant, staying relevant. When you are dealing with the same clients over and over again, it never gets old. You must make sure you are showcasing different elements, you change the menu, every single time. I seldom use the same menu.
DS: Cupcakes! There is no Chef Stacey without her cupcakes. How did you get your start in desserts?
SS: Yes, cupcakes are my thing. Years ago, I was watching a show called DC Cupcakes about two sisters that opened up their business along with their mother, not knowing it was going to be so insanely popular. From one day, customers were out the door and around the corner. I thought, “Oh, I can do that.” It just looked like a lot of fun.
DS: Even though we are open to the public, the Dean Supply store sometimes feels like a membership club. We see chefs from all over the city, business owners, etc. You name them, they shop here. When you are with us shopping, what are your go-to products?

SS: Up and coming entrepreneurs, caterers, chefs, personal chefs, Dean Supply is the way to go. You can go in and find items that are discounted or discontinued that they no longer carry. If you have the time, just walk the aisles. There are things in there you didn’t know you needed like an ice chest or an ice tray. They always have something you need. But they also carry new products too. They are all around the store and nicely situated where you can shop and ask a lot of questions. They got tons of employees, almost in every aisle, restocking the shelves or taking inventory. They all have answers, they always have an answer.
