Metro C5 Heated Proofing and Holding Cabinet, Clear Door 120V
The Metro C519-CFC-U is a full-height heated proofing and holding cabinet built for bakeries, restaurants, and commissary kitchens that need one unit to handle both dough proofing and hot holding. The clear polycarbonate door lets staff check on product without opening the cabinet and losing heat. It runs on 120V and covers a temperature range of 80°F to 190°F — low enough for proofing, high enough for food safety holding.
- Holds up to 18 full-size (18" x 26") sheet pans or 34 half-size steam table pans; universal slides adjust on 1-1/2" increments and accept sheet pans, steam table pans, and GN pans
- Three-position control module switches between holding, proofing, and combination modes — removable without tools for cleaning and service
- Digital thermometer, recessed control dials, master on/off switch, and power indicator lights all on a bottom-mount control panel
- Non-insulated aluminum construction keeps weight down; ships at approximately 211 lbs. and rolls on 5" neoprene casters with two locking brakes
- Clear door uses a polycarbonate window in a powder-coated aluminum frame; hinges are field-reversible with 180° swing and high-temperature Santoprene gaskets
- Rated at 2,000 watts / 16.7 amps on a standard NEMA 5-20P outlet; UL, cUL, and NSF certified
A good fit for a scratch bakery running morning production — proof the dough, then flip the same cabinet to holding mode for finished product before service. One unit, one outlet, one footprint.
