The Cleveland Foodservice Guide publishes a pre-inspection checklist — 37 things to confirm before an inspector walks in, each one citing the rule it rests on. Most of them are things you do. About a dozen are things you buy.

Coolers have to be pulled down to temperature, training has to be finished, and two documents have to already exist. Walk the list a week out, not the night before — and order anything missing at the start of that week.

Temperature

A hanging thermometer in every refrigerated unit, readable without opening the door. Plus a calibrated probe thermometer, and a thin-probe one for patties, fillets and chicken breasts — a thick stem cannot read a thin piece of food accurately. No glass-stemmed thermometers unless they are shatterproof-coated.

Sanitizer and warewashing

A test kit at every workstation — and it has to match your chemistry. Quat strips cannot read a chlorine solution, and a strip for the wrong chemical will give you a confident wrong answer. Wiping cloths live in the bucket between uses, not draped on a rail.

Handwashing and restrooms

Soap and individual disposable towels at every handsink, from the moment they walk in — not a roller towel, not a shared cloth. Restrooms need the same, plus bath tissue. Stock them before the walkthrough; an empty dispenser is an avoidable finding — and a refill with no dispenser to put it in is the same finding.

Food protection

Gloves, tongs, utensils or deli paper at every station handling ready-to-eat food. Walk each station and ask how the person standing there will actually do it. Hair restraints for food employees. Buy gloves in the sizes your people actually wear — a box of one size is a box half your staff will not use.

The supplies behind the written procedure

OAC 3717-1-02.4

Ohio requires a written procedure for vomiting and diarrheal events. The document is the requirement — no product satisfies it — but the rule expects supplies that match what your procedure says you will do, kept where staff can reach them without asking you.
